Ingredients:
3 medium carrots, grated
2 tbsp olive oil
1 cup thick yogurt (strained or Greek)
2 garlic cloves, crushed
Salt to taste
Garnish: dill, walnuts, or a drizzle of olive oil
Preparation:
Sauté the carrots, warm olive oil in a pan, then gently cook the grated carrots until soft and fragrant. Let cool.
Make it creamy, mix yogurt, garlic, and salt until smooth.
Fold it together, add the cooled carrots, stir, and taste.
Top it off, garnish with dill, crushed walnuts, or olive oil and serve chilled.
