We’re sharing a very easy mezze recipe with you, one that’s quick to prepare and sit perfectly next to a main course or among a few shared plates.
Simple ingredients, nothing complicated, just good flavor coming together in the oven.
When paired with a glass of Smyrna Black Grape Raki, the table feels complete.
Ingredients:
• 1½ tbsp butter
8 mushrooms (stems removed)
2 cloves garlic, sliced
1 tsp salt
1 tsp black pepper
2 sprigs fresh thyme
80 g gouda cheese, sliced
Preparation:
Melt the butter in a pan over medium heat.
Add the chopped mushroom stems and sauté until softened.
Add garlic and cook for 3–4 minutes, just until fragrant.
Season with salt, pepper, and thyme, then remove from heat.
Arrange mushroom caps in an ovenproof dish.
Fill with the sautéed mixture and top with sliced gouda cheese.
Bake at 180°C (356°F) for about 15 minutes, until the cheese melts and lightly browns.
💡 Tip:
Instead of washing the mushrooms, gently peel the caps and wipe them with a damp cloth. Too much water can cause them to darken. A quick rinse is enough if needed.
